I attend an international wellness convention in Salt Lake City every year.

One of my favourite places to eat when I go to SLC is a tiny vegan/vegetarian place. The dishes they make are incredible and would be enjoyed by the biggest of carnivores.

This year I tried Deviled Avocado.

All I can say is OMG… Amazing!

So amazing my friend, Carmela, (serious foodie, nicknamed the Italian Fit mom), tried with all her might to find out what was in these tasty appetizers.

No go. They were not giving any the goods.

We knew it was simple, and we were probably all over thinking it. All we wanted was one tiny clue of spices.

So I got playing in the kitchen.

I got as close as I could to the Deviled Avocados we had on our trip.

And yes, it’s super simple. And yes, we were over thinking it.

Here it is, my as-close-as-I-could-get, crazy-simple Deviled Avocados

  • Ripe avocado cut in half
  • Traditional hummus – 57g (1/4 cup)
  • Smoked paprika – ¼ tsp
  1. Cut the avocado in half. Remove the seed.
  2. In a small bowl, mix the hummus and smoked paprika together starting with a ¼ tsp and slowing adding more paprika until it's to your taste.
  3. Divide the hummus mixture and spoon into the centre of the avocado
  4. Serve immediately

I adore the little convenient preservative-free, mini-sized hummus packages for lunches and quick snack. Just so happens, they are the perfect size for making this recipe for one avocado.

The amount of smoked paprika will be based on your personal preference. Start with a 1/4 tsp and add it a little at a time until it’s got the right amount of kick for you. I did add quite a bit, but it did it gradually and taste-tested along the way.

Once you have the mixture the way you want it, divide it between the two avocados, and dust the tops with more paprika.

Now, I could have gone to all the trouble of making swishy swirly tops for these, but let’s face it, life it too busy to be worried about getting these lookin’ all fancy.

Just scoop the damn hummus into the avocado and get on with eating them!
