Mashed Avocado and Tomato Snack

I’ve written about my love affair with Avocados before. I truly adore them. Yes, they can take some time to develop a taste for, but once you do it’s amazing.

Avocados are a nutrient packed fruit. They provide over 20 vitamins, minerals, and phytonutrients per serving! Plus they are full of the good fats we need in our diet which may lower cholesterol, help to stabilize blood sugar, and aid in glowing skin!

Any way to add avocado into your diet is great! This is one of my favourite snacks, and it takes less than 5 minutes.

Basil, Oregano

Mashed Avocado & Tomato Snack

  • 1 ripe avocado
  • 1/2 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/4 tsp dried parsley
  • good pinch of chili peppers
  • pinch of sea salt
  • cherry tomatoes – halved
  • 2-4 Wasa® or Ryvita® Crackers

Scoop out the avocado in a small bowl and mash with a fork. Add basil, oregano, parsley, chili peppers, and sea salt. Mash it all together.

Spread the avocado mash over the whole grain crackers and top with sliced cherry tomatoes. If you are avoiding gluten, a great alternative is toast using UDI’s Whole Grain Gluten-Free bread. You can find it at most grocery stores.

This snack serves 1-2 depending on the size of the avocado. Just adjust the seasoning accordingly. If you only use ½ the avocado, you can sprinkle some lemon juice on it and store in a BPA-free container, face down, for about 12 – 24 hours.
