Chipotle Mayo Dip

When eating sweet potato fries, one must have Chipotle Mayo.  It just gotta be a law or something.

The kids and I were preparing our supper of Black Bean Beer soup, and we felt a side of baked fries would be perfect. That, however, set off an instant craving for Chipotle Mayo… which I did not have.

Every recipe I have ever looked at calls for ingredients I don’t have.  I’ve never bought Chipotle abodo or canned chipotle peppers. I hit Pinterest, I Googled, I struck out.  So what I did was take the common ingredients I found and decided to wing it and figure something out because… darn it… We were having Chipotle Mayo tonight!

What turned out was a delicious dip, that works not only on fries, but dip for veggies, burgers, pitas, sandwiches, you name it!

Chipotle Mayo Dip

Chipotle Mayo Dip
Recipe type: Sauce & Dips
  • 1 cup of mayo (or vegenaise). Option: ½ cup mayo and ½ plain yogurt.
  • ½ tsp Chipotle Chili Pepper powder
  • ½ tsp Garlic powder
  • ⅛ - ¼ tsp Paprika. You can always add more.
  • ¼ tsp Ground pepper. If you use fresh, just to taste.
  • Sea salt - to taste
  • 2 tsps - lime juice (preferred) or lemon juice. If you need more, add a ¼ tsp at a time. I used 2½ tsps total. I use Lakewood Organic Pure Lime or Lemon culinary juices... so much better!
  1. Combine all ingredients and whisk well. Allow to sit for at least 30 minutes before serving in the fridge for the flavours to develop.

Next time you make fries, give this easy recipe a try.  Because there shall be Chipotle Mayo Dip tonight!

  1. Hey Karen, great timing! we are making burgers tonight and will use this as the sauce instead of straight up mayo. whoo hoo. anxious to try it.

    by the way, I had a recipe that called for Chipotle adobo. what the heck is that? I subbed just chipotle pwdr.

    • That is great timing! I hope you enjoy it. Please let me know! Chipotle adobo is canned chipotle peppers marinated in a type of tomato sauce. When the smoked, dried peppers are put in the sauce it is suppose to bring out more of the smoky and spicy flavour. I have personally never used it or even seen it to buy for that matter, but I was running into to the same challenge so, I too, just went for it with the chipotle powder!
