Chocolate Coconut Snack Bites

I posted pictures of these little beauties on Instagram and Facebook and had a frenzy of people wanting the recipe.

Over the last month I’ve been devoting my blog to fast snacks in form of protein balls or tasty bites.

We’ve covered Peanut Butter Cookie Dough Bites, Lemon Poppy Seed Snack Bites, and Peanut Butter Protein Balls. This week, we bring in the chocolate!

We are talking a fast recipe here that will satisfy the chocolate cravings without all the extra unnecessary sweet.

Plus, these are so easy to make gluten free! If you need certified gluten free, just make sure the rolled oats indicate that on the packaging.

So here we go…Chocolate Coconut Snack Bites. Yum freakin’ yum yum yum!

Chocolate Coconut Snack Bites
Recipe type: Snack
  • 1½ cups of old fashioned rolled oats
  • ¼ - ½ cup almond or coconut flour
  • 1 cup unsweetened shredded coconut
  • ¼ cup cocoa powder
  • ½ tsp sea salt
  • ⅓ mini dark chocolate chips
  • ¼ cup coconut oil
  • ¼ cup unsweetened almond milk (or non dairy milk of your choice)
  • ¼ cup of honey (or maple syrup)
  • ½ Tbsp pure vanilla extract
  1. Add all the dry ingredients into a mixing bowl. Mix well.
  2. Add the coconut oil, milk, honey, and vanilla.
  3. Using a mixer, blend well.
  4. Form tablespoon sized balls and place them on a cookie tray.
  5. Freeze for at least 15 minutes.
  6. Store in the freezer for when you need a quick snack.
Start with just ¼ cup of flour. If the mixture is too sticky for you, add more flour a little at a time. Do not go over ½ cup. Even if the consistency seems too tacky, it will not be so after it's frozen.
