Delicious Quinoa & Spelt Waffles (Gluten Free alternative included)

Quinoa & Spelt Waffles

These are becoming a Saturday morning ritual at our home!  We love them so much, we make a double or triple batch and freeze all the left overs so we have nutritious, fast breakfasts ready to go on busy mornings. They are so simple, tasty, and these are made without dairy or processed sugar!

If you prefer gluten free, I have included a variation at the bottom. They are equally yummy!

Quinoa & Spelt Waffles

  • 1 & 1/8 cup Quinoa flour
  • 1 & 1/8 cup Spelt flour
  • 4 tsp baking powder
  • 3/4 natural sea salt
  • 2 large eggs, beaten
  • 1 & 1/4 cup of unsweetened organic Almond Milk
  • 1 cup water
  • 1/2 vegetable oil
  • 2 tsp pure vanilla extract
  • 1 & 1/4 cup local honey cup

Combine the flours, baking power, and salt in a large bowl.  Mix and set aside. In medium bowl, beat eggs.  Add almond milk, water, oil, vanilla, and agave to eggs.  Whisk and add to dry ingredients.  Combine all ingredients and whisk. This batter will be thin.

Preheat waffle iron.  If required, grease or lightly spay with cooking oil.  Cook according to the manufacturer instructions.  The cooking time will vary, but I have found 3 minutes to be about right on most models.  The lid will open very easily when they are cooked.

Top with fresh berries, homemade fruit sauce, pure maple syrup, or try the bonus Lemon Zesty Cream Cheese topping at the end of this blog!

Remember to freeze the left overs in BPA free containers.  I put the exact number I need per meal in a BPA free freezer bag. To reheat, just pop them in the toaster.

Gluten Free Alternative

Replace Spelt with Sorghum flour.  Ensure the baking powder is also gluten free. This variation cooks a bit faster, again depending on the model of waffle maker.  They will not rise quite as much.  Ensure the waffle iron is sprayed with cooking oil each time as I find they will stick a bit easier than the quinoa/spelt.

Bonus… Lemon Zesty Cream Cheese Topping

This is so flavourful, you need very little. It adds just the perfect zip!

  • 1/2 cup cream cheese
  • 1/2 cup plain Greek yogurt
  • 1 Tbsp pure maple syrup
  • zest of 1/2 a lemon (if you want more, add more)
  • 1/2 tsp pure vanilla extract
