Grape & Bocconcini Summer Salad

When it’s hot outside, don’t you just love to enjoy a cool refreshing meal?  I have a wonderful, summer recipe for you!  This flavourful salad is an absolute favourite of mine.  So when Mother Nature brings the heat, you can be cool as a cucumber…or grapes in this case 😉

I was inspired to create my own version of this recipe from a similar one I had tried and loved on vacation.  It’s crisp, sweet, tangy, zesty, and healthy all at the same time.  Plus, it’s super easy to make so get the kids involved.  We had fun preparing it as a family.

Grape & Bocconcini Summer Salad


  • 2 cups Black or Red Seedless Grapes
  • 2 cups Green Seedless Grapes
  • 2 cups Cherry tomatoes
  • 2 cups (398ml jar) Kalamata Olives, pitted  – rinsed
  • 2 cups (400g) mini Bocconcini  – rinsed
  • 2 tbsp Fresh Mint
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tsp Olive Oil
  • 2 tsp flax seed Oil
  • 1/4 tsp sea salt
  • Pepper to taste

In a large mixing bowl, add grapes, tomatoes, olives, Bocconcini, and mint. If any of the tomatoes are too big, cut them in half.  Gently mix.

In a separate bowl, combine lemon zest and juice, olive and flax seed oil, sea salt and pepper.  Stir mixture.

Add half of the lemon/oil mix to the salad.  Gently stir until everything is coated.  Taste test before adding the rest.  Add more until it’s just the right amount of zesty for you.  Mix again.

That’s it… super easy! Enjoy the summer heat 🙂
