Peanut Butter Protein Balls

I showed up to our Zumba classes one day and brought Karen a treat for after class.

You have to realize, when we are done teaching, we need to refuel pronto. We are usually starving.

Sometimes we run from one class to another and a big meal is not an option, but going without fuel is also not happening.

I surprised Karen with the a delicious Peanut Butter Protein snack bite!

I love these because they are incredibly fast to make and there are no weird ingredients.  Just like the saying goes… Keep it simple!

Whip up a batch and keep them on hand. It’s easily doubled or even tripled.  Just keep them in the freezer or pack them with an ice pack to keep them nice and cold in your lunch kit.

Peanut Butter Protein Balls
Recipe type: Snack
  • ½ cup natural peanut butter (Nut free: pumpkin butter or sunflower butter)
  • ⅓ cup liquid honey
  • 2 Tbsp melted coconut oil
  • 1 tsp vanilla
  • 1 cup old fashioned rolled oats (Gluten Free if preferred)
  • 1 cup unsweetened shredded coconut
  • ½ cup ground flax
  • ½ dark chocolate chips (mini chips work the best)
  1. Add peanut butter, honey, coconut oil, and vanilla in a large mixing bowl. With a blender, mix well.
  2. Add the remaining ingredients and continue to blend. Mix thoroughly.
  3. On a cookie tray, lined with parchment paper, scoop tablespoon sized amounts and form into balls. Make sure you press them together well.
  4. Freeze for at least 10 minutes and then store in the freezer.
