Quinoa Curry Vegetable Soup

I’m totally a soup girl.  They are fast, easy to do, and warm you right up.  Last year one of my dear friends shared a recipe with me that looked so amazing, I just couldn’t wait to try it! After a few tweaks and modifications for allergies and taste preference, I had it!

I make this soup all the time.  I’m a always on the go, kinda person, so being able to pull a hearty, balanced, nutritious meal out of the freezer is a must.  This is my go to meal!

I’ve shared this recipe with my subscribers before… the days before my blog.  The feedback was incredible.  I’m sure you will enjoy it as well!

Ingredients

  • 2 large carrots – peeled and chopped
  • 3/4 cup red quinoa (or white), uncooked
  • 1 tbsp extra virgin olive oil
  • 1 medium sized purple onion, finely chopped
  • 1 medium sized zucchini
  • 4 garlic cloves – pressed
  • 1 vegetable bouillon cube, regular sodium content
  • 6 cups of water, boiled
  • 1 can (28oz) diced tomatoes
  • 1 can (15oz) black beans, rinsed
  • 2 tsps curry powder (or to taste)
  • 1/4 tsp cinnamon
  • 1/4 nutmeg
  • 1/2 tsp sea salt
  • Fresh ground black pepper to taste
  • 4 cups kale – center stem removed and chopped

Directions
In a large soup pot, heat the oil. Add chopped onion, and sauté on medium-low until translucent. Add chopped carrots, zucchini, and pressed garlic. Continue to sauté for 5-7 minutes.

While sautéing, boil water in kettle. Place the bouillon cube in a medium sized bowl. Once boiled, pour the water over the cube. Stir and dissolve well.

Add the bouillon mixture, tomatoes (with juice), quinoa, black beans, curry, cinnamon, nutmeg, sea salt and black pepper to the soup pot. Bring to a boil. Reduce temperature and simmer for 15-20 minutes.

Add kale and stir well. Cover. Continue to simmer for 30-35 minutes. Do a taste test and add more curry (or other spices) if desired.
